“I Ate Everything!” — A Rainbow Success at Booker ES

When it comes to healthy eating, learning should be just as colorful as the food on your plate. That’s exactly what students at Kermit R. Booker Elementary School discovered during the latest Eat a Rainbow Farmers Market. This day is always filled with hands-on learning, fresh produce, and plenty of adventurous bites.
The day began in the classroom, where Ms. Momii visited 100 first and second grade students to teach them about the importance of “eating a rainbow.” The lesson focused on how different colors of fruits and vegetables help different parts of the body stay healthy and strong.
To help bring the lesson to life, Ms. Momii introduced new educational posters showing which colors benefit different parts of the body. The visuals quickly became classroom favorites, helping students connect the bright foods they see every day with the powerful ways they help our bodies grow.

Then came one of the students’ favorite parts of the day: the tasting.
As part of every Farmers Market experience, students had the opportunity to try something new. This time, they sampled spinach and arugula seasoned with orange. While some students described the greens as “crunchy,” “soft,” and “flat,” the biggest success came from hearing comments like:
“This is delicious!”
“I ate everything!”
Moments like these are what our Eat a Rainbow Farmers Market is all about, encouraging kids to step outside their comfort zones, explore new foods, and discover that healthy eating can actually taste good.


After the lessons, students visit the cafeteria transformed into a colorful mini farmers market where they shop for their own produce. Each child selects items from across the rainbow, building bags full of fresh fruits and vegetables to take home to their families.
This month’s rainbow included:
- Red: Grapefruit
- Yellow: Petite Medley Tomatoes
- Yellow: Lemon
- Green: Avocado
- Blue: Blueberries
- Purple: Red Onion
- White: Garlic
Students also received produce featured in the classroom tasting, giving them another opportunity to enjoy spinach and arugula at home and share their tasting experience with their families.

Programs like Eat a Rainbow Farmers Market do more than provide fresh produce, they help create positive experiences around healthy eating. By combining education, tastings, and hands-on interaction with fresh foods, students gain the confidence to try new things and build healthier habits that can last a lifetime.
At the end of the day, the cafeteria was filled with smiling faces, colorful produce bags, and students proudly showing off the rainbow they picked themselves. And if the chorus of “I ate everything!” was any indication, this Farmers Market was a bright success.
